The above items are perfect for a Fritatta:  Sautee leeks, garlic and/or onions, add sliced or diced boiled potatoes and continue sauteeing for a few minutes, pour in scrambled eggs to cover (add some grated cheese, salt and pepper if you like) and cook in oven or over stove in heavy skillet until just set.  Delicious for breakfast, lunch or dinner.
 
You can pare, slice, and steam the parsnips to serve on the side.  If you haven't tasted our parsnips, you don't know what you're missing.  Be sure to keep the water left after steaming:  it is as sweet to drink as ambrosia.
